    Why the Name

    A popular sweet around South Indian sweet stall. These crispy sweet is filled with sweetened khoya and nuts mixture. Deep fried and soaked in syrup makes this dripping with sugar. Suryan means Sun; Chandran means Moon. Suryakala is shaped round resembling "sun"; chandrakala is shaped like a half moon. Hence the name.

    Plain Flour

    All purpose flour | maida is used in making the dough. Plain flour is mixed with ghee to create the texture of the outer shell. Whole wheat flour can be used as a healthy alternative.

    Ghee

    Ghee is mixed with the flour to create a shortening of the dough which makes the outer layer flaky. If you want the sweet to be rich, you can fry the sweet in ghee.

    Khoya

    Khoya is milk which is reduced till thick and paste like. I used Palkova so I skipped adding sugar in the filling. If you are using unsweetened khoya, you have to add ½ cup of sugar.

    Make sure you use ghee or butter when making the dough. It creates a short-crust pastry texture to the dough which infact helps with the flaky texture of the sweet when frying.
    Chill the dough for minimum of 30 minutes for easy rolling.
    Don't over fill the sweet, else it may leach out when frying.
    If you are using unsweetened khoya, add ¼ cup of sugar in the filling.

    Making Dough

    1)Take flour in a bowl. I used plain flour. 2)Add in salt. 3)Add in ghee | clarified butter. Mix the ghee into the flour. 4)Add in water 5)Knead to a dough. Cover the dough with plastic wrap and refrigerate the dough for at least 30 minutes.

    Make Filling

    6)Mix khoya (I used palkova) crushed nuts, cardamom powder. I used palkova, If you are using unsweetened khoya you might need to add sugar.

    Make Sugar Syrup

    7)Take sugar in a sauce pan. 8)Pour in water. I added some lemon juice in this too. 9)Bring it to a boil. Cook till it gets sticky texture, it will take around 8 to 10 minutes. Finally add cardamom powder, saffron and mix well. Sugar syrup is done.

Meanwhile we can prepare stuffing. Dry roast the nuts in a kadai and allow to cool down. Do not burnt. In a blender / mixie make a fine powder of it.
