If you restore a backup and chats are still missing, you most likely restored a backup file that didn't contain the missing chats. Be sure to manually back up your chats before changing devices or restoring so you have the most up-to-date chat history.
Open the chat. Tap More options > More > Export chat. Tap Without media or Include media. An email will be created with your chat history attached as a .zip file. Note: If you choose Include media, the most recent media sent will be added as attachments to be sent from your sharesheet.
