I then re-ran the installer as described in step 6 on the Epic page linked to above, which in my case is C:\Program Files (x86)\Epic Games\Launcher\Portal\Extras\EOS\EpicOnlineServices.msi and the installer ran successfully fixing the issue.

From Xbox it isn't possible to do it, the only accounts connected by consoles are Twitch, Discord and Mixer. You must delete the linked account directly from the Epic website. Thanks for getting back to me. That's a shame, I've got absolutely no idea what Epic account it thinks it's linked to, so I can't do it! : (.
