Anything but is the commonly used phrase and means not at all. Aside from that, they both mean the same thing more or less. In some instances you may need a pause before except but that depends on context. anything but not at all (used for emphasis): he is anything but racist.(OED) We cannot do anything except to work on daily basis.(nytimes)
Feb 6, 2019 · "Something" is usually more specific, while "anything" is all-inclusive. That's why "anything" is often used in a negative sentence, since it's negation is more conclusive. "I don't know anything about that." vs. "I don't know something about that." The first is absolute ignorance, the second is ignorance of a particular fact.
Apr 4, 2013 · 3. "Ask of someone" would tend to imply asking for something from someone, perhaps a favor. Whereas, "ask someone" simply means to ask someone something, like a question. Perhaps more clearly illustrated with "They are asking too much of him," vs *"They are asking him too much."

Your father and me, we’re thinking of staying. My partners and me, we’re interested in investing in your product. All those are grammatical.

So, "doing everything you’re asking of it" means doing everything you expect or demand of it. That sense is derived by the use of the preposition of -- see your own example.

He would have done anything you would ask him to! He would have done anything you would have asked him to! He would have done anything you had asked him to!
