Assuming that default configurations have not been changed for a sample company, the Tax Unit object is usually 'Default Tax Unit'. Now you can query the Tax Unit Object for the company and fetch the GSTIN.
I also sometimes start an order number, say 6 digits, starting at 200,000 and customer numbers at 5 digits, starting at 10,000 which would for example give me 90,000 unique customer numbers and 800,000 unique order numbers to use, and you could always tell just by looking at it whether it was a customer number or an order number.

In the Format Cell dialog, click on the format type you want (eg.,'Accounting), and then click Custom. The list on the bottom right shows the current Accounting` format string (along with others). The textbox above shows you the NumberFormat string for that item. You can copy/paste right from that textbox into a string in your code.
