For most dex builds the best option is typically one handing and using the second hand for something else. The strength bonus is miniscule at best. Only reason you'll want to two hand a dex weapon should be to use a different moveset, attack shields or hard enemies, or use a weapon skill.
I've heard that using a weapon two handed causes a substantially higher amount of posture/poise damage, but I've tested it on the enemy prior to the Godskin apostle, who takes a relatively decent amount of hits, and he gets staggered/stance broken with the same number of hits.
