Possibly because the smell of alcohol is coming off his breath, but it's just usage, mate; no one teaches us a reason for these things, but I can assure you that no one says "I can smell alcohol in his breath." In any case, what seems reasonable is influenced by the mother tongue.

If someone were really annoying me and I'm becoming angry or upset, my husband might say, "take a breath." meaning calm down and count to 10! (before you explode.) BUT. having said this....if I were in a very busy situation and someone said, "take a breath."
