Dec 7, 2020 · The “T.J.” was dropped from the concept’s name. Palmer became a franchisee while also developing his own concepts, including a celebrated full-service venture called Up the Creek. Palmer incorporated a few quirky features into Applebee’s. For instance, he insisted that all seating be at the same level, so patrons could make eye contact.
1980: T.J. Applebee's Edibles and Elixirs, the brainchild of Bill and T.J. Palmer, opens in Atlanta. 1983: W.R. Grace & Co. purchases the restaurant concept from the Palmers. 1988: Abe Gustin and John Hamra buy Applebee's from Grace. 1989: Applebee's goes public. 1994: 500th Applebee's Neighborhood Grill & Bar opens.

Rosenfield and Flax, who were inspired by Wolfgang Puck’s popular Spago restaurant in West Hollywood and hired Puck’s original pizza chef at CPK, read Ray Kroc’s autobiography prior to starting their business.
